Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- Prepare Cake Batter: In a large bowl, beat the eggs and sugar together until thick and pale. Add the orange zest, orange juice, and vanilla extract. Mix well. Sift together the cake flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until well combined.
- Bake the Cake: Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes, until the cake is springy to the touch.
- Roll the Cake: As soon as the cake is baked, turn it onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper and roll the cake in the towel from the short end. Let it cool completely.
- Prepare Filling: In a medium bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in the orange marmalade.
- Assemble the Cake: Unroll the cooled cake carefully. Spread the orange cream filling evenly over the surface. Roll the cake back up, without the towel, and place it seam-side down on a serving platter.
- Garnish: Dust the top with powdered sugar. Garnish with orange slices and fresh mint leaves.
