Description

Delicious chocolate cupcakes topped with creamy peanut butter frosting and decorated with mini peanut butter cups and chocolate sprinkles.


Ingredients

  • 1 box (15 oz) chocolate cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 12 tbsp milk
  • 1 tsp vanilla extract
  • Mini peanut butter cups, chopped
  • Chocolate sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, combine cake mix, eggs, oil, and water. Mix until smooth.
  3. Fill liners 2/3 full. Bake for 18–22 minutes, or until a toothpick inserted comes out clean.
  4. Let cupcakes cool completely on a wire rack.
  5. In a mixing bowl, beat peanut butter and butter until creamy.
  6. Gradually add powdered sugar, vanilla, and 1 tbsp milk. Beat until fluffy. Add more milk if needed for consistency.
  7. Transfer frosting to a piping bag fitted with a star tip.
  8. Pipe swirls of frosting onto each cooled cupcake.
  9. Top with chopped peanut butter cups and chocolate sprinkles.
  10. Serve immediately or store in an airtight container.
