Greek Yogurt Bites with Pistachios

Description

Delicious and creamy yogurt bites with a crunchy pistachio topping.


Ingredients

Scale
  • 1 cup greek yogurt or coconut yogurt
  • 1/3 cup dry roasted & salted Pistachios
  • 34 tbsp honey or maple syrup
  • 1 scoop protein powder (optional)
  • 1 tsp vanilla extract
  • pinch sea salt
  • 1 cup white chocolate chips
  • 1/4 cup canned full-fat coconut milk

Instructions

  1. In a blender, combine all of the ingredients and blend until smooth. It’s okay if there’s some small pistachio chunks.
  2. Taste the mixture & adjust as you’d like (more vanilla, sweetener, etc).
  3. Divide the yogurt mixture amongst your mold, filling each crevice about 2/3 way full.
  4. For a harder shell, melt chocolate and top the bites; for a fudgier texture, make a 2-ingredient chocolate ganache.
  5. For the chocolate shell, add the coconut oil and chocolate to a small bowl and melt using the double-boiler method or microwave.
  6. For the ganache, heat the coconut milk until hot, but not boiling, and pour over the chocolate chips. Let sit for 5 minutes before mixing.
  7. Add a little chocolate to the top of each bite, filling that last 1/3 of each crevice.
  8. Freeze for 3-4 hours before removing from molds. Store in an airtight container in the freezer for up to two months.
  9. Let the bites thaw a few minutes before enjoying for the creamiest texture.

Notes

  • For a non-dairy option, use coconut yogurt.
  • Adjust sweetness to your preference by adding more honey or maple syrup.
