Delicious and chewy strawberry mochi dessert bites filled with fresh strawberries and optional sweet fillings.

- 1 cup glutinous rice flour (mochiko)
- 1/4 cup granulated sugar
- 2/3 cup water
- 1/4 cup strawberry puree
- Cornstarch, for dusting
- Fresh strawberries, hulled and halved
- 1 cup red bean paste or sweetened condensed milk (optional for filling)
- 1/2 cup desiccated coconut (optional for coating)
Instructions
- Prepare the Mochi Dough: In a microwave-safe bowl, mix the glutinous rice flour, sugar, water, and strawberry puree until smooth. Cover the bowl with plastic wrap, leaving a small gap for steam to escape. Microwave on high for 2 minutes. Stir well, then microwave for another 1 minute until the dough is translucent and thick.
- Cool and Shape the Dough: Dust a clean surface with cornstarch. Transfer the mochi dough to the surface and let it cool slightly. Once manageable, divide the dough into small pieces, keeping your hands well-cornstarched to prevent sticking.
- Assemble the Mochi: Flatten each mochi piece into a disc. Place a strawberry half in the center. If desired, add a small amount of red bean paste or condensed milk for added sweetness. Carefully pinch the edges of the dough to seal and form a ball. Roll the completed mochi in additional cornstarch or desiccated coconut.
- Finish and Serve: Allow the mochi to cool completely and set. Serve fresh or store in an airtight container at room temperature.
Notes
- To prevent sticking, keep hands and surfaces generously dusted with cornstarch.
- Experiment with different fillings, like chocolate or Nutella, for variety.
- Adjust sugar and puree amounts to taste, depending on the sweetness of the strawberries.
- Mochi is best consumed fresh but can be stored for up to a day at room temperature.
