Description

Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder

  • 1/2 teaspoon ground ginger
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (177°C). Grease a 9×13-inch pan and line with parchment if desired.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
  3. In another bowl, mix brown sugar, granulated sugar, oil, and eggs until smooth. Stir in vanilla extract.
  4. Add dry mixture to wet mixture in two parts, alternating with buttermilk. Stir just until combined.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool completely in the pan on a wire rack.
  8. For the frosting: Beat cream cheese and butter until smooth. Add powdered sugar gradually. Mix in vanilla and salt until fluffy.
  9. Spread frosting over cooled cake. Garnish with a sprinkle of cinnamon or nutmeg if desired.
  10. Slice and serve!
