Ingredients

  • 1 cup strawberries, hulled and halved
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 kiwi, peeled and sliced
  • 1 cup pineapple chunks
  • 1 cup watermelon chunks
  • 2 cups Greek yogurt
  • 1 cup granola
  • 1/2 cup chopped nuts (almonds or pecans)
  • 1/4 cup honey or maple syrup
  • Fresh mint leaves for garnish
  • Whipped cream (optional)

Instructions

  1. Prepare the Fruits: Rinse all the berries and pat them dry with a paper towel. Peel and slice the kiwi, and cut the pineapple and watermelon into bite-size chunks.

  2. Layer the Parfait: In a large glass serving bowl or individual cups, start by adding a layer of granola. Spoon a layer of Greek yogurt over the granola. Add an assortment of the sliced fruits: some strawberries, blueberries, raspberries, kiwi, pineapple, and watermelon. Drizzle a bit of honey or maple syrup over the fruit layer for added sweetness.

  3. Repeat the Layers: Repeat the layering process: more granola, another yogurt layer, and then the fruits. Make sure to use all of your ingredients.

  4. Top It Off: On the final layer, add some extra fruits for decoration and a dollop of whipped cream if desired. Sprinkle chopped nuts on top for added crunch. Garnish with fresh mint leaves for a refreshing touch.
