Description

A delicious vegetable quiche packed with flavor and perfect for any meal.


Ingredients

  • 2 (9-inch) frozen ready-to-bake deep dish pie crusts
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 3/4 cup finely diced yellow onion
  • 3/4 cup finely diced green bell pepper
  • 3/4 cup finely diced red pepper
  • 3/4 cup diced mushrooms (baby bella or brown)
  • 3/4 cup diced zucchini (remove seeds)
  • Salt and pepper to taste
  • 2 teaspoons minced garlic
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 teaspoon Italian seasoning
  • 1 cup freshly shredded Swiss cheese
  • 1 cup freshly shredded sharp Cheddar cheese
  • Chopped chives (optional for garnish)

Instructions

  1. Preheat oven to 350°F. Place the unwrapped frozen pie crusts on a sheet pan and par-bake for 10 minutes. Remove and let cool briefly.
  2. Heat olive oil and butter in a large nonstick skillet over medium heat. Add the onion, bell peppers, mushrooms, and zucchini. Season with salt and pepper to taste. Cook, stirring often, until the veggies soften and excess moisture cooks off, about 8 to 10 minutes. Add garlic in the last minute. Remove from heat and let cool slightly.
  3. In a large bowl, whisk the eggs until smooth. Add the heavy cream and Italian seasoning and whisk to combine.
  4. Add the cooled veggie mixture and both cheeses to the custard and stir to combine.
  5. Keeping the crusts on the baking sheet, divide the filling evenly between the two crusts, spooning in the veggies first and then pouring in the custard. Smooth the tops so the filling is evenly spread.
  6. Bake for 33 to 38 minutes, or until the centers are set but still slightly jiggly. Watch closely so they don’t overbake.
  7. Let stand for 5 minutes before slicing. Top with chives if desired.

Notes

  • Note 1: Pie crusts can be replaced with homemade crust if preferred.
  • Note 2: Zucchini should be deseeded for optimal texture.
  • Note 3: Swiss cheese can be substituted with Gruyere for a different flavor.
